Tilapia for Two

It rained all day long.  At first it was dreary. Then, I pretended it was a grey winter day and that I was cozy inside my warm apartment and it became more fun. I ventured outside this afternoon to make a trip to Whole Foods for the weekly groceries. I decided to make something involving these for dinner…

I’m not a big vegetable person so I really have to force myself to buy them when Matt is not with me at the grocery store (he loves vegetables). I also bought some tilapia today, so I decided to just make the beans and fish together in tin foil. Remember when those tin foil packets used to be in commercials all the time with those two women?

I sprinkled the fish with a little salt, pepper, basil, and garlic and then put a nice chunk of butter on top of both.  We also had two roma tomatoes that were about to go bad in the fridge, so I just threw them on top.

I added the beans, squeezed lemon over the whole thing, and sealed the packet.

Matt had to work late, so I lit our rarely used candles to add a touch of romance to a typical Monday night.

When I took the fish out of the oven, it was exciting to peak inside and breathe in the steam!

Served with couscous on the side…

The fish was actually quite flavorful and the beans were perfect.  I’m not good at making complicated meals or sauces, so I love it when food tastes good with just a little bit of seasoning.  I’m glad I tossed in the romas at the end because they were awesome with this.

I’m about to eat a freezer snickerdoodle from Matt’s mom and tackle this huge pile…

Lots and lots of folding to do. Tomorrow morning I’m babysitting and then I might be making an exciting purchase.  Night!

    I love simple dinners, especially after an indulgent weekend. Your steamed tilapia, green beans, and couscous look like the perfect Monday night dinner to me!

    I’m not a huge veggie fan either but I also hate letting food go bad so I force myself to buy vegetables and know that I’ll make myself eat them before I’ll throw them out. Works for me!

    Great blog concept. I read your sister’s blog and am her age but I am little bit more on your page. I am at a place where I live it up everyday, not drinking-wise, although that is an element at tomes, but just having fun. I often think people think I am too old to have fun but I love to celebrate life every single day.

    I also think you would like this article…and possibly my blog. It’s nice to know others feel the same about their 20’s.

    haha Laura I can’t stop giggling this morning about the women with the tin foil pouches from the 90’s!! Also, great recap of the weekend. It was so great to see you! Move to DC!!! It’s the perfect mix of everything!

      Oh I’m glad you remember the commercials, because Matt didn’t know what I was referring to. It was great to see you too…I might not be able to move to DC anytime soon, but I’ll work on moving closer to you!
