There’s nothing like a new coffee flavor to get you out of bed…

The cinnamon bun flavor was really good, but not incredible.  Creme brulee is a hard flavor to follow…

But, I had one of the best bowls of oatmeal I’ve had all year.  Just baked apples, raisins, and cinnamon sunflower butter mixed into a maple and brown sugar packet:)

Work was just work today. I think the excitement of the first days has worn off, and the pressure to get things accomplished is starting to set in.  At least it was b.good veggie burger day!

This guy didn’t taste as good as he does in the actual restaurant, but he was enjoyable nonetheless.

After work, the afternoon exhaustion that was all too familiar last year started to set in.  Although I made it to the gym, I really just sat on a machine and barely broke a sweat:(  I guess I need to get more sleep?  Too bad that’s not going to happen tonight…

When I got home from the gym, I knew I couldn’t just sit and relax because I’d be too temped to take a nap.  Late afternoon naps = not being able to fall asleep at night = even more tiredness in the morning.

Sooo, to avoid nap temptation, I tackled a little closet project; operation sweater sort and fold:

I found a few things to give away and organized the rest.

Once I finished the sweaters, I decided to go ahead and re-organize the entire closet.  Although I have no other space in my 475 square foot apartment to store off-season clothes, I did put all summer dresses and shirts towards the back and moved all winter-ish and work clothes towards the front for easy access.  It looks a LOT better and things are much easier to find; this should be helpful in the morning because laying out my clothes the night before hasn’t been too successful…

By the time I finished, I felt more awake, but I only had 20 minutes to eat dinner before babysitting. After yesterday’s experience with dates, I was inspired to find a way to get them into (well onto) my dinner.  I bring you date and goat cheese pesto flatbread:

Holy cow, this was the best throw-together dinner I’ve had in weeks.  The sweetness of the dates together with the goat cheese (and white cheddar) was heavenly.  And, the soft flatbread (aka Naan) never ever disappoints.

I’m babysitting and it looks like it might be a late night…at least I might be able to enjoy a little cable tv after I put the little one to bed.

    Dinner looks phenomenal! I love, love dates and they go so well with creamy goat cheese. Yummy 🙂
