Speaking of November

Today was pretty typical. It didn’t really feel like Halloween because all of the festivities took place Saturday night. I went to a noon-time spinning class and then threw together a smorgasbord of things we had lingering in the fridge for lunch.

I had a lot of cleaning to do today becauase I haven’t been doing very well with keeping my apartment clean during the work week. I tend to pile my clothes onto my desk chair, so I always have a lot of stuff to put away by the weekend. Plus, I had to do three loads of laundry and catch up on dishes. I finally got some fresh air in the late afternoon by taking a walk down Newbury and grabbing groceries at TJ’s. The walk home with the bags was not too fun as it’s coooold out and I didn’t have gloves.

Dinner was eggplant parm!

I made it exactly the same as last time, but it wasn’t quite as good. I think it’s because I used cheddar and there wasn’t much left in the bag we had on hand.

Dessert was a bowl of pb puffins from our brand new box.  I missed those guys last week.

I hope you’ve all had a happy halloween weekend.  I can’t believe it’s November already.

    Mmmm I need to make eggplant parm sometime soon :).

    One of my favorite snack-y desserts is pb puffins with some chocolate chips – YUM!

    I’ve never gotten to try Eggplant Parm (probably because I’m mildly afraid of taking on an eggplant) – that looks like a legit dish though – will definitely have to put it on my pre-NYE cooking to-do list!

    Love the leftover snack plate for lunch. Just necessary, lady!
