Simmering Supper

Jack Frost was knocking at my door this morning…since when is it winter? Thank goodness today was the second to last day of Jon’s soccer practice because I was freezing at babysitting. I had on a long sweater and a full pea coat, but I just don’t do well with cold.

I was also hungry and tired after work, so I was pretty darn excited to have this all ready when I came home (it’s just chicken with bbq sauce + a little brown sugar and vinegar)!!!

And my excitement quadrupled when Matt came home with these:)

We split both in our new pumpkin glasses from the festival this weekend.

Both beers were enjoyable (because alcohol almost always is), but neither beer was particularly noteworthy:( Matt thinks we just became pickier/were spoiled over the weekend.

Now if I had only thought of simmering the chicken in beer…
Dinner was awesome though and I loved not having to make it.Gotta go get some work done so I won’t have any to do this weekend. We’re on the home stretch folks!

    Wow that chicken looks good. Do you have the recipe/guide to making it?

      I used 1/2 to 3/4 a bottle of thick bbq sauce with 1/4 cup cider vinegar and 2-3 TBSP brown sugar. I added extra water too bc I was worried about buring after 10+ hours of cooking, but I don’t think it was needed…

    Ugh, I hate the cold temps now. Oh well, that just makes me excited for Christmas.
