Another day at the internship, another day of babysitting, and another yummy dinner to turn my semi-boring Wednesday into something more fun.

Matt chopped the brussels and I made a simple sauce out of peanut butter, soy sauce, water, and sriracha based on this recipe from Cooking Light. I’ve missed soy sauce in my life because there’s so many fun things you can do with it.

I stir-fried the noodles in the sauce and garlic and then added shrimp and snap peas. So exciting that we just happenend to have such fun ingredients on hand!

I ended up adding more soy sauce and pb, as well as a few generous squirts of lime juice.

I have to confess, folks, that I’m starting to get back into the I-wish-this-day-were-over mentality. I just keep thinking: I can’t wait to have my life back, and then I realize that working full time is my life because I’ll never be a student again:( Perhaps this means the lack of daylight is getting to me and it’s time for a vacation…good thing there’s one beginning in six days!

 

Going to take back my twenties try to stay awake for another hour so I can pack a lunch and get ready for another day. Keep your fingers crossed for pumpkin pancakes in the AM.

    Your stir-fry looks better than ours! Wish we had though to add peanut butter.

    I’m always afraid to do anything else with brussels sprouts besides roasting them. It’s just time, really.

    I completely agree about Thanksgiving – I’m basically at my wits end.
