Surprise Friday Night

No work tomorrow!!! Although we will have to make up the day in June, I’m hoping my workload will be a bit lighter on the last day of school and maybe I won’t need to go…

The nice thing about a snow day is that it kinda of forces you to relax because I’m guessing that not a whole lot will be open. I’m planning to sleep in, finish writing a report, get a decent work-out in (my gym time has been half-assed lately), and possibly grab a glass of wine with a friend or see a movie.

And, because I didn’t know about the snow day until this evening I still managed to be pretty productive this afternoon (unlike Friday afternoons). I started some serious job application prep work (aka, resume, cover letter, and narrowing down districts I want to apply to), cycled for 35 minutes, and cooked a fun dinner with Matt.

Matt’s parents gave us Food & Wine’s best recipes from 2010 for Christmas and I picked out a recipe for roasted chicken with tangerines. Of course, I failed to notice that the recipe required a whole chicken in my rush to make the grocery list on Saturday, and bought some breast tenders instead. I had to change the portions in the recipe, so I ended up improvising a bit with this one.

But first, I popped a bottle of wine! This is a local pinot gris from Coastal Vineyards that my parents bought us on our winery visit in June. It tasted like summer!

To prepare the chicken, I first drizzled it with olive oil and threw some tangerine chunks into the pan. I then topped it with a sauce made with the juice of a tangerine, garlic, rosemary, and white wine. It baked for about ten minutes, I added a little chicken stock, and baked it for 10 or so more.

While enjoyable, this was a little bland, but that’s to be expected since it was supposed to be stuffed inside a chicken and roasted for over an hour. I’ll have to try it again and actually follow the directions.

Matt and I just finished watching the Truman Show (one of the few movies I own from my childhood) and now I’m lounging till bed. Wheeeeeee.

    It looks great! I am digging fruit with chicken lately.

    I think at my internship with the high school, I was done the week before the last day of school. They only had 2 or 3 half days that week, and they were taking finals and whatnot. So you probably won’t have to go 🙂

    I have this cookbook too and love it! I love all the little side suggestions for wine pairings, parties, and quick easy recipes 🙂
