Cooking

Although it’s cold and snowy outside, I swear the sun is shinning brighter these days (maybe because the days are getting longer?). There’s even talk of near 40 degree temperatures this weekend! Two more weeks until “spring” break. Not that I’m counting or anything.

My lack of productivity at my internship today confirmed that I work much better at home. I kind of went through the motions of work, but didn’t get too much accomplished. I did, however, make it to a wonderful spinning class this evening. I actually felt like turning up the dial instead of just sitting there. I think my body has finally recovered from the 12 day food and no-exercise fest that was Christmas break. The class put me in such a good mood that I had high hopes for all the cleaning I would do when I got home, but that all changed after I used my energy making dinner. Since Matt ended up working late, I just [actively] zoned out on my computer, and drooled a million dessert recipes, one of which I hope to attempt next week.

After my semi-failed frittata a few weeks ago, I decided to give it another go tonight. This guy consisted of four eggs + a splash of egg whites that needed to be used up in the fridge, more baby bellas, broccoli, and blue cheese.

And because I need at least 3 servings of cheese each day, I added the last of the swiss/gruyère blend to the top before broiling.

MUCH, much better than last time!!

Because I’ve missed hours worth of babysitting from the snow days, I agreed to watch the kiddos tomorrow evening:( My weekends mean so much more to me now that I’m working, so I get pretty sad when I have to work on a weekend night.

I’m off to dream about the day when working and making money are one in the same.

    I can relate. I’m looking forward to the day when I can drive to work and drive home, making money while I’m at it. Going to school, my internship, meetings, etc. gets to be too much…and not having an income can be pretty stressful too.
