Herb’s Tilapia

Today I was busy busy and the hours flew by. I had an IEP in the morning, knocked out some testing in the afternoon, and got to sit in on an interview for a position my school is looking to fill next year. To be honest, being at the interview made me a little nervous about the coming months….

I went to a 5 o’clock spinning session, but the instructor had some trouble with her ipod and we had to resort to a terrible cd of random songs. I think the music affected my motivation because I barely broke a sweat:( I was pretty tired this evening though, so I didn’t feel like working too hard anyway.

Dinner was a delightful combination of herbs, butter, and tilapia – inspired by my mom’s wonderful herb chicken.

The flavor was juuust right; I’d call this one a success. But then again, you can’t really go wrong when you top a meal with big chunks of butter.

This guy was served over quinoa with insanely cheap local green beans on the side.

Considering that my first two meals of the day were dominated by peanut butter, bananas, and bread, it was nice to have a balanced dinner.
I’m pumped for a wide open weekend and a good-looking forecast. See ya tomorrow.

    Definitely looks like you captured Buzz’s Herb Chicken perfectly, down to the huge amounts of butter! Now where’s the classic Younger salad of lettuce, chopped carrots, and maters?

      Well it’s really not HUGE amounts of butter. I might say, “A nice amount of butter.” Come on home ya’ll and I’ll make you some.
