My day started at 6:20 and my body did not like it. I went in a bit earlier than usual because I had an IEP meeting a little after 8. The meeting went well and the rest of my day flew by because there was a lot of action in our office today. After work, I made it through 20 minutes on the elliptical and two planks before I called it a day. All I want to do is sleep this week. I came home and straightened up and then discovered that the internet wasn’t working. Boo. Good thing I’m not addicted or anything.

So, stuffed peppers! I haven’t made these since I started TBMT back in August. Looking back over the post makes me crave summer. Although these peppers were much smaller than the ones I found at the farmer’s market, they were just as tasty. I began by sautéing some garlic and jalapenos in a EVOO before adding a can of black beans, corn, chili powder, and mango salsa to create the stuffing.

This was one of the better batches of peppers I’ve made and I loved eating the stuffing over couscous…these really hit the spot.

Is there such thing as a spring slump, because I think I’m in one. The warm weather is just soo close and the lighting is throwing me off. I’m pumped for summer, but it’s hard to be too excited when I have no clue what I might be doing. I’m feeling motivated and lazy at the same time:/

    I think I’m feeling the “spring slump” too. They say “April showers bring May flowers,” but what does March bring? It’s just a little gloomy.
