Thirsty Thursday

All the beer samples from last night left me soo thirsty on this sunny Thursday. Despite chugging water all day, I just could not catch up. Don’t ya hate that? So, I decided that a nap was definitely in order when I got home from work. 20 minutes in the flannels felt just perfect and I woke up feeling refreshed and ready to pedal my heart out at spinning. It was a great class and I topped it off with some push-ups and planks. I’ve been trying to focus on my core these days given that I’ve neglected it all winter.

Sadly, on the way home from the gym, Matt called to say he’d have to work late:( I ditched our meal plan and searched for something suitable in the kitchen. Inspired by a sandwich I saw on the menu at Gaslight on Sunday, I decided to make an asparagus melt.

I utilized the butt of the Iggy’s focaccia loaf from Tuesday, which made for a long and skinny platform for my asparagus.

With honey mustard and white cheddar, this little melt was great.

The rest of dinner consisted of terra chips + carrots with hummus and pear slices. I enjoy cooking legit dinners, but sometimes its fun to just throw together tastes of different things.

Any major plans for the weekend? I’m gonna take it easy, enjoy time with friends, and finish my 6th and final case study!!!!! We’ve got a lot planned in May, leaving only a few free weekends in April and June to enjoy Boston before we depart. We’re really trying to get back to our favorite places and take advantage of all the city has to offer in the coming weeks. So, if it seems like we’re eating out a ton, that’s probably why! I’m really going to miss my walkable city life:(
Going to watch Love and Other Drugs. Anyone seen it?

      Yeah, I thought it looked weird too…but it’s Trader Joe’s cheddar slices!!!

    I have seen that movie! It was quite different to what I had been expecting but I loved it anyway, mostly because it has Anne Hathaway in it and just quietly I have loved her since The Princess Diaries…
