[Extra] Ordinary Veggies

It was back to work today, but I’m so excited for another short week, that I barely noticed:) I went in a little late today because the supervisors were at a meeting and I managed to fit in a little stair climbing before work. Coming home this afternoon with the gym already out of the way was glorious. I laundered, I cleaned, I relaxed, I applied to more jobs. I desperately need a haircut and considered getting one, but I’m in one of those moods where I kind of see how long I can go without one. Other than that, life was pretty ordinary today.

When it came to dinner, I was extra hungry. I think I may have stretched my stomach over the weekend, considering I had 7 (hey, they were small-ish) pieces of cake over three days. Matt and I both wanted something healthy, but filling, so we roasted a huge pan of sweet potatoes and brussels, mixed it with rice, basil, and Kansas bbq sauce, and declared it dinner.

My oh my was this fabulous. A few years ago, I never would have guessed that I’d eat a bowl of veggies and love it.

The bad news is I’m still hungry. The good news is I’m going to dig into my new dried fruit stash (peaches, cherries, pineapple, figs) – a gag graduation gift from Matt, who does not understand my obsession with shriveled fruit.

    My dinners always change but after a indulgent weekend I always start out with oats! I also snack throughout the day on healthier things like fruit, Greek yogurt, nuts and seeds,etc.

    LOL my boyfriend feels the same. But with nuts.

    Veggies are the best foods when you’re hungry. I was starving after eating pizza the other night, and had a giant bowl of broccoli and carrots, and filled up fast! Fiber power 🙂

    Oh, I have to know which BBQ sauce you used! I am from Kansas and we take our sauce very seriously. I know I have my favorites!

      I’m embarrassed to say it’s just Trader Joe’s sauce that is labeled as Kansas style:) I’d love to try the real stuff though!

    Being a Kansas City native, I have to say I am partial to our style of BBQ: sweet, thick sauce and burnt ends! You should give Gates or Arthur Bryant’s sauces a try (if you can find them in Boston). Both restaurants are nationally known and BBQ institutions here in KC. Definitely worth hunting for!

    After a vacation or celebratory food-filled weekend, I like to do something vegetarian and veggie-filled – like stir-fried tofu + greens, or black beans + sweet potato + spinach.

    I make killer meatballs (they taste best with lamb, but chicken mince also works well) with a sauce that is made entirely from pureed veges. I made it for my housemate once and she couldn’t believe how many veggies it had in it. It’s also ridiculously easy and delicious 🙂
