Energy Stuffed Peppers

Some days I have energy and some days I do not. Today, I had energy! I got a ton accomplished at work and continued the trend at home by changing the sheets, unloading the dishwasher, packing tomorrow’s breakfast, lunch, and gym bag, creating a consignment store clothing pile, cleaning out all the crumbs and such from the bottom of my work bag, and making stuffed peppers for dinner – all before 7:30! I wish I could be this productive every night. The best part is that I’ve blogged AND I’m going out for a glass of wine with friends in a bit. Who am I?

When I make stuffed peppers, I never really know what’s gonna go in them. I usually have some Mexican stuff around (ok, I use Mexican to refer to anything that tastes good with salsa and/or chips, which is probably not pc) and I just hope they turn out.

I had some old black beans in the fridge that I was hoping to incorporate, but they didn’t smell so great, so I didn’t have too much to work with. I ended up creating a mixture of basmati (the kind with little veggies mixed in), corn, and paprika. I mixed in two huge scoops of spicy hummus to hold it together and give it more flavor. And, of course, I stuffed the pepper with some chunks of white cheddar.

The center was like creamy risotto and the cheddar was heavenly. I’m still not in love with the flavor of bell peppers, so I might add a bit more spice next time.

    Good reminder. Have been wanting to make stuffed peppers but keep forgetting. Putting them on the shopping list now.
