As you may have figured out if you’re a reader of Kath’s blog, the practicum Matt was doing was actually in India! He’s been gone for 13 days and he’s finally home!!! It was a bit lonely here, but I kept myself busy with two weekends with family.

Last night, we celebrated his homecoming with a beer. He came bearing Indian jewelry and scarves, as well as Indian desserts!

These were definitely different, but really good! My guess is some sort of coconut paste with pistachio and chocolate sprinkles.

This evening, we enjoyed our fist dinner of spring on the deck!! It was soooo nice to be outside for a change, especially because our apartment is kind of dark inside.

Dinner was mexican pizzas – corn tortillas topped with lime refried beans, mozzarella, avocado, and jalapenos. I had planned to make a quesadilla, but decided on these at the last minute and they were fabulous! I used the chili and lime refried beans and the flavor was perfect for a summerish night.

Too bad they went down really fast.

Tomorrow is the first day of spring, which means Happy Birthday to my Mom, who is still very young at heart!!!

    Hey there!

    I’ve been reading your blog for a long while now just never made myself known, so hello finally!. I love looking at all your pictures of food and beer – I’m most certainly a foodie myself and love good drinks to complete any meal 🙂 What made me comment tonight, of all things, is the desserts from India. They sound delicious- anything with a coconut paste, chocolate sprinkles, and pistachios sounds perfect!

    I appreciate all your honesty in your writings as well. It takes a lot of courage to admit your uncertainties – just know you’re in good company! Keep up your positive attitude and continue to follow your heart. It is clear you have a loving family and boyfriend to support you no matter what!

    Wow, I cannot believe Matt was allowed to bring those desserts through customs?! Lucky. Those pizzas look incredible.. I know what I’m making for dinner tonight, thanks!!

      It’s actually whole foods brand and very cheap!!

    Your Mexican pizzas are making my mouth water! I have been loving tortillas with ooey-gooey melted cheese lately 😀

    Those Indian treats look divine! Coconut, pistachios, AND chocolate? I think it was meant to be eaten by me because those are my favorites! : P Your blog is wonderful. I think I had the sentiment of “taking back my twenties” too a few years back but now… I think I’ve finally found my niche after some twists and turns. Good luck to you! : )
