How I Fill My Stomach

Hope y’all had a great long weekend – it felt amazing to have that one extra day and we did a lot of relaxing over here.

Ever since writing this post about treating my IBS, I’ve received quite a few requests to blog about my daily eats. I know I fill this space with pictures of pork belly, bourbon, and tons of tacos, but I promise I cook Sunday-Friday:) It’s taken me almost 5 years to figure out how to eat so that my stomach doesn’t cramp, and I’m proud to say I no longer need medication. So, here ya go:

Breakfasts

I’m a sweet breakfast kind of girl, so I’m pretty faithful to oatmeal with banana and nut butter. My go-to during the work week is overnight oats with almond milk, cinnamon, mashed banana, sunflower butter (my school doesn’t allow nuts at the moment), and a sprinkle/drizzle of Nikki’s cake batter coconut butter. On weekends, I often just have pb + banana, protein shakes (made with plant-based Vega), or pancakes (usually made with coconut flour).

Lunches

During the summer, I ate eggs almost every day! I like a fried egg on avocado toast or scrambled egg tacos with salsa and avocado, plus a salad.

During the school year though, I sometimes take dinner leftovers, or throw frozen things into a container (rice, spinach, protein, sauce).

But my most common lunch at work is a salad topped with a veggie burger or avocado chicken salad plus fun toppings with sweet potato chips and hummus on the side.

Dinners

I’m a pretty lazy cook, so my dinners are usually just simple recipes or bowls. Here’s last week:

Matt doesn’t usually come home for dinner (his job is intense and he often eats at 10pm), but when he’s home and I know in advance, I’ll try to make something a little more fancy like this bbq salmon over spinach + polenta or a big crockpot meal (salsa chicken over quinoa)

Snacks (in the afternoon and after dinner)

nut butter + banana

nut butter + dates

Kind bars

homemade protein bars

coconut flour + almond flour muffins or bread

grapes

Stomach stuff stinks – I’m just happy about all the incredible [and clean] things I can choose to put in my body. Life has never tasted better.

    I’m glad that you’ve figured out a great-looking way of eating that works – simple changes/swaps sometimes work wonders and aren’t too difficult to incorporate. As with most of life, it’s a case of finding the right balance, so it’s nice to see all of your eating out dinners too. I think that for most of us it’s a battle to fight against long-held bad food habits, so it’s encouraging to see as well as hear about delicious-looking healthier alternatives.
    As an aside, what does Matt do work-wise? – those are some late nights!

    Just a quick comment (from a mom who has a kiddo with food allergies) – if you’re bringing your overnight oats to school, the almond milk you’re using would violate the “no nuts” policy. I’m guessing you need a non-dairy option for your oats, so maybe soy milk, rice milk or coconut milk would give you a nut-free meal for school?

      Yes! I got into the habit of using coconut milk last year and then totally forgot when school started – thanks!

    I’m guessing Matt works in finance? My bf does also and I’m no stranger to the late nights they put in. Although I’m not complaining, it is hard to plan dinners when you expect they aren’t going to be home for it and then they are!

    Btw, I just got home from Greece two days ago and used your old posts as references! We did the sunset cruise and loved it! Thanks!

      Oh yay, I’m so glad you enjoyed Greece – It’s my favorite place on Earth thus far! My husband works as a consultant so he’s always working:(

    I love seeing what other people with stomach issues eats! I have Celiac Disease along with IBS..which is a bit of a struggle figuring things that my stomach will actually like. Thanks for sharing.

    Thank you for posting this! It was super helpful. Also my husband and I just went to Greece for our honeymoon and stayed at Astra Suites while in Santorini, unreal!
