Would you believe that I didn’t start eating pizza until I was in college??  I didn’t like red sauce as a child, and since there were no other kinds of pizza back then (well at least not in small town Hillsborough), I just didn’t eat it.  When I got more adventuresome (ha, pizza is basic) in college, I become ravenous for pizza, realizing what I had been missing all those years.

Fast forward to today, and we eat it almost every Friday night.  It’s super easy, always delicious, and feels celebratory for kicking off the weekend. Plus, it’s hard to find food gluten free pizza crust, so it’s just easier to make at home.  I use the above mix from Amazon.

Without further ado, here are my favorite combinations:

  1. BBQ sauce base, mozzarella layer, corn, red bell pepper, shrimp (saute and add at the end), arugula topping (toss with olive oil and add at end)
  2. Pesto + light red sauce base, mozzarella layer, sautéed mushrooms, chicken sausage, basil
  3. Red sauce base, mozzarella + fontina layer, pepperoni, broccolini (best if roasted), lemon zest
  4. Olive oil drizzle base, light mozzarella layer, dates, bacon, butternut squash, ricotta, sage
  5. Red sauce base, mozzarella layer, Italian turkey sausage, olives, arugula topping
  6. Refried beans + salsa base, pepper jack blend, corn, rotisserie chicken, jalapeños, cilantro

    I’m curious as to what prompted you to eat a gluten free diet! I noticed you eat a lot of gluten free foods (possibly all gluten free foods??) and I wondered why!! Pizza is the BEST …. I joke that I have a separate stomach just for pizza that never gets full 😉

      Hi! I do eat completely gluten-free with the exception of a beer here and there. I had terrible stomach issues for about five years, and tried different medications, probiotics, dairy free, etc with no luck. My doctor suggested trying a gluten free diet, and it’s what finally worked! Haven’t had an upset stomach/cramping since 2014!

    Have you ever tried hummus instead of sauce? It is amazing! I like to use a roasted red pepper hummus and feta cheese. Other toppings are used..they are just based on what I have on hand. Totally with you on red sauce not being my favorite!! So glad there are now so many different options!!!
