Food trucks are taking over. But I love ‘em. And love that ‘gourmet’ food is getting cheap and trendy.
Matt and I ventured over to the weekly food truck gathering in the Virginia Highlands this evening. We tried to resist the mac and cheese, claiming that we could make it at home, but we gave into the temptation when we saw the summer succotash – ziti noodles with fontina and jack cheese covered with peppers, corn, lima beans, and topped with goat cheese. It was great, especially the fresh goat cheese, but we both agreed the portion was small for a $7.
We also tried a bacon and cheddar biscuit, which had great texture, but was not quote as flavorful as I would have expected.
It was fabulous. Especially the mango coconut rice. I just wish there had been more plantains for dipping:)
Today was my last day of babysitting! I’m going to miss the little guy because he’s so so so cute. Now, I’ve got 2 weeks of freedom and then the real work begins. The friend I was babysitting for must have known that cake is the way to my heart.
Because she brought me these babies. I was nice enough to share them with Matt:)

Today, I babysat the little munchkin from 7 to 7. We went on three walks, he took two naps, and I got peed on once:) And I’m pooped. Not so much because I was that active, but because it’s been a while since I had to get up at 6. I forgot how terrible that makes me feel. The realization that I have 3 more weeks of summer really hit home today. But, boy am I ready for that first paycheck! Oh, and as of today, I’m back on coffee. (I quit two Septembers ago). It tastes sooo good, but it’s so bad for my stomach/acid reflux/caffeine sensitivity.
I don’t have a single picture for you today. I rewarded myself after the long day with a stop at Chipotle, and that bowl was consumed before you could even say camera. This is what happens when you come home ravenous and are trying to clean out the cabinets. I made it a cereal night because I was especially hungry by 5pm today. No time for cooking! I’ve been so hungry since I got back from Atlanta and I’m wondering if the ~8 miles of walking just caught up with me? My doctor says my blood sugar is low so I’m curious to find out what that’s all about too.

crack almond butter in the cabinet (from Kath?) that I was just gonna save for when I get back, but I couldn’t resist opening it. Wise decision it was. SOOOO goood. I gave up coffee 2 years ago, so this will be a wonderful morning replacement.
Anyway, today was my last day of babysitting! I’ll really miss the little one because she was just so cute, but I’m happy to close the door on the babysitting thing (at least for now). I’ll actually be doing some sitting over the summer to make some extra dough to spend in Atlanta, but it’s only for a few weeks.
After work, I picked up my engagement ring because I needed to have it made a bit smaller. I couldn’t believe how much I missed it! I mean, I went twenty six years without it, you’d think one week wouldn’t even be noticeable:) I was also pretty excited to peek into the wedding ring case….
Just two big days between me and summer vacation. I knew I chose this job for a reason:)
Today was my last day of babysitting! Now I am officially unemployed.
It was a little sad, but mostly exciting. The weather was breezy and in the 70’s – perfect for lying under my tree while the kids played at the park.
I wished a had brought a new book to start today, but I just enjoyed the sunshine.
Then I took the little guy to J.P. Licks for a special ice cream treat. I got half peanut butter and half cookie yogurt. Mmmm! I eat so much tart yogurt, that I forgot how good the sweet stuff is. I enjoyed this SO much this afternoon! And I think my companion really liked his enormous oreo cake batter in a waffle cone. It took him a good 20 minutes to get through it and I was finished in five.
I came home and split a Long Trail with Matt who was already working on this beautiful veggie frittata.
I ate half the pie with a little spinach salad and I am now felling like a balloon. Unfortunately, I’ve noticed some of my stomach symptoms returning lately and I am NOT happy about it. I know some people are really sensitive to red peppers, so maybe it’s just that. I’m hoping to get a second opinion once I have some decent health insurance.

It felt like summer today – Boston reached 77!!!
Yet, I still wore my pea coat over a flannel shirt this afternoon because I’m thawing out. When I was at the park, I actually overheard a girl talking about me to another, saying “I always check the weather in the morning…I feel so sorry for the people who have on wool sweaters and coats today.” Hey, I check the weather every morning too, but Boston is unpredictable and I was cozy in my coat, thank you.
Anywho, the weather was amazing and it allowed me to slow down a bit and appreciate being outside instead of running to and from my T stop like I usually do. Weather affects the pace of the day soo much.
In celebration of life, I poured myself a teeny tiny whiskey sour made with TJ’s sparking lemonade and a hint of lime. Perfect.
Dinner was quesadillas made with leftover pineapple pork from Sunday.
This week is flying by and, for once, I actually want it to slow down. When the weather is warm in Boston, it’s such an amazing city.
