How’s it going out there? I’m pumped for a long weekend. Matt has Monday off, and he’s been working like crazy, so I know he deserves a break. Birthday Party + Couch Weekend

This weekend involved both partying and resting. I made tons of cupcakes on Friday! Half were for my friend Liz’s birthday party, and half were for the Duke/UNC watch party we were supposed to attend. I made strawberry buttercream, but used too much strawberry – the flavor was great, but these melted under the patio heater later on. Oh hey Sunday. Time is flying. I can’t believe Christmas is next week!! Friday night was our usual low key evening. I’m obsessed with this new eggplant dip I found at WF. It’s tangy and sooo good with sweet potato chips. I made Kath’s pumpkin meatloaf this week! Yes, it’s ugly, but that’s because I made a one-person portion [excuses] and just kinda formed it in one corner of the loaf pan. The upside was that all the sides were crunchy end pieces.
