Thoughts from a Thursday

Cooking Life Ramblings

-I’ve been eating bowls all week – farro bowl with veggie burger, rice bowl with chickpeas and curry sauce, pasta bowl with chicken sausage and red sauce, and a quinoa bowl with Mexican toppings (sidenote: I took home some of the salsa from Blue Mesa Grill that was served at the party and it is the absolute best I’ve ever had!! I must get more!) -The daffodils are blooming in Dallas and temps are warming up. Was that winter? If…

Pizza Friday & A Trinity Groves Outing

Cooking

Happy Monday! We’ve got freezing rain on the way here in Dallas:( I’m heading to the east coast tomorrow to visit my family, and I hope I can get out! For now, a recap of my weekend. Friday was cold and wet, so Matt and I opted to get cozy on the couch and not do a thing. We opened a bottle of Italian pinot grigio and watched Cloud Atlas, which was super weird. Loved Tom Hanks though! I made…

Thoughts from a Snowy Thursday

Ramblings

-Snow day! We had beautiful, huge chunks of snow falling for most of the day today. Matt worked from home and really wanted to get out of the house, so he’s taking me out for a glass of half priced wine at the happy hour around the corner. It’s the little things that make me giddy. -I finally made this steak from HowSweet this week and loved it. I’ve been eating the sauce on everything for days. . -Nordstrom lost…

The Calm Before the Festivities

Uncategorized

Happy Sunday that’s really a Wednesday! What are you guys up to for the holidays? This is like the first time in my entire life that I haven’t traveled and it’s so relaxing! Matt and I had a nice weekend with a mix of fun and prepping for our Christmas guests. After grabbing a beer at a local Irish pub on Friday, we came home and made dinner. I sipped on this begian dubbel while chopping brussels and baking some…

-The sun’s out after days and its glorious. Those post-apocalyptic scenarios where the sun doesn’t shine anymore are my worse nightmare. -Matt had to travel this week, so I ate lots of bowls with toppings for dinner. My usual go-to combos over quinoa are: roasted broccoli, nuts, and veggie burger; black beans, corn, roasted sweet potatoes, avocado, salsa; mushrooms, carrots, spicy sausage, and Indian simmer sauce. This new one I had last night was incredible and included cranberries, sweet potatoes…

Recap of Randomness

Cooking

It’s a dreary Monday here and we have a chance of winter weather! Exciting! I’m definitely getting into the holiday mood and I’m pumped to head to Matt’s house in Maryland for Thanksgiving. My jeans are getting a bit too tight though – I hate when that happens because then you know the damage is already done! Anyway, I lightened things up last week with two new meals – crockpot salsa chicken in the form of a taco salad and…

Hot Weekend

Uncategorized

70 and sunny sure makes for a nice Monday! But, yesterday was HOT. I definitely don’t miss being covered in sweat when I get in the car. Despite the weather, the leaves are turning here! There’s no brilliant oranges, but I’ll take yellow. Last week flew by, and it was great having Matt home in time for dinner a few nights. Cooking highlights included these butternut squash tacos. Anyone have recommendations for warming corn tortillas? I can never get it…

Week Night Pleasures

Cooking Life Ramblings Travel

Happy hump. This week is flying by because it’s a short one! We’re traveling for yet another wedding this weekend! Plus, evenings have been really nice, as Matt has had a light workload and come home for dinner every night. It makes such a big difference to have a companion to dine with, and I do enjoy an after-dinner stroll. It’s still 80 here, btw. I made sweet potato enchiladas on Sunday and then broccoli with beef on Monday. We’re…

A Quiet Weekend

Cooking

We had a long, relaxing weekend here in Dallas. Despite the beautiful evening on Friday, we decided to stay in and cook. The minute Matt arrived home from work, we popped open this bottle of cab (gift, I think?) and drank a glass out on our little balcony. It was a great way to kick off the weekend. I picked up some extra thick pork chops for dinner and we cooked them with apples and bacon brussels. What a perfect…
