Burger or Scone?

I finally got back in the kitchen today and made Angela’s Lentil Walnut Burgers again.

I used a real egg this time and they held together much better (I think my flax egg failed me the last time I made these).

I also made parsnip fries for the first time and I’m in love. They were sooo sweet! Who knew?

This dinner was delightful.

The burger’s texture kept reminding me of something, and about halfway through dinner I realized this burger was the consistency of a scone: dry (in a good way) and crumbly!

I’m determined to get to bed at a reasonable hour this evening and I still have quite a few things on the agenda, so I’m signing off. Nighty nite.

    Parsnip fries look wonderful. Just the other day, your dad wanted to buy a parsnip but I said I wouldn’t eat it. Now I’ve told him we can give parsnips a try if we can make fries out of them!

    Those fries are crazy! I never would have guessed.
