“I participated in an Influencer Activation Program on behalf of Mom Central Consulting for the Beef Checkoff. I received products to facilitate this review and a promotional item to thank me for participating.” Remember that beef, it’s what’s for dinner commercial from way back when? That’s the first thing I thought of when I was asked to do a post for The Beef Checkoff – turns out it’s the same program from years ago. It’s a national marketing and research…

Thoughts from a Thursday

Ramblings

How’s it going out there? Matt and I had a wonderful anniversary celebration – we had dinner at the famous Fearings (out of this world) and the enjoyed the top layer of our wedding cake afterwards. It was a little beat up from riding to Texas in a cooler for 3 days, but it somehow survived. I think we were too full to appreciate it right after dinner, but boy did in taste good the next day! This week has…

Life Ramblings

How’s it going out there? I’m pumped for a long weekend. Matt has Monday off, and he’s been working like crazy, so I know he deserves a break. I have Monday off too, although I don’t really think I have earned a holiday working part-time:) We’re sticking around here and planning to check out Fort Worth on Saturday. A stay-cation of sorts. All I’m craving is a good burger. I haven’t been blogging much because there really isn’t much going…

Cooking Travel

Another Thanksgiving over:( I had a great time relaxing in Maryland!! It was chilly though – I lasted about 15 minutes playing cornhole on Thanksgiving day, and then snuggled under a blanket until dinner. I’m not very good anyway… Matt’s sis was dog sitting this guy and he was adorable!!!! Just look at that fur! We all sampled and shared lots and lots of beers! We had a traditional spread of food and I made another pumpkin pie. This dairy-free…

Randomness

Cooking Ramblings

I’m obsessed with this new eggplant dip I found at WF. It’s tangy and sooo good with sweet potato chips. I made Kath’s pumpkin meatloaf this week! Yes, it’s ugly, but that’s because I made a one-person portion [excuses] and just kinda formed it in one corner of the loaf pan. The upside was that all the sides were crunchy end pieces. I also added bourbon in place of the water in the sauce:) I loved the pumpkin sauce so…

I started to write ‘happy hump day’ and then realized it’s Thursday…yay for a weekend at home! After so much travel this summer, I’m craving low-key time at home more than ever and I’m excited to continue exploring Dallas on the weekends. Since a Trader Joe’s just opened here, I’ve been going almost every week. It’s weird how the stores are all slightly different – this one doesn’t have horseradish hummus! Anyway, a few weeks ago, I jumped on the…

Coming My Way

Cooking

I guess my body wants me to slow down even more, because I woke up this morning with a sore throat, and I know it’s got to be Matt’s sickness coming my way. He’s been out of commission for 3 days so. I hope that’s not a preview of what’s to come. On a more positive note, I did discover a delicious new crock pot meal! I found this recipe for curried lentils and sweet potatoes in a magazine. Despite…

Bootcamp

Cooking

I finally tried morning bootcamp at the Y! I’ve been walking by for many weeks now, on the way to spinning, and I finally found the energy to try it. Of course, it was the one day the class was designed as a partner workout, so I was that awkward new girl who knew no one. But a nice girl agreed to be my partner, not knowing that I’m not in bootcamp shape. She was a tiny little thing, but…

What I’m Loving

Cooking Life Ramblings The Working World

I feel like I’m in this peaceful period – the calm before the storm. This winter has been relatively slow in terms of plans and events, and while I know things are about to be super busy, I’ve just been enjoying going to work, slowly making my way through the giant to-do list that is the wedding, and taking pleasure in the slow pace of the cold season. Here’s what I’ve been loving lately: I’ve been trying to work out…
