Fitting It All In [To My Stomach]

We have been cramming so much into these last few weekends.  We have one more as a threesome before my mom joins us for #babywatch!

Friday started like any other weekend – with homemade pizza. I can’t remember why, but it was super late before we got Emerson to bed, and I was exhausted making the pizza at nearly 9pm.  I told Matt I have one more weekend of pizza-making in me, but then we are switching to delivery so I don’t have to cook and clean on Fridays (I usually do this while he does bath & bed time). My stomach is out of space these days, so I just had three smaller pieces to leave room for a piece of strawberry cheesecake from Sunflower Baking Co.:)

Saturday, I went to yoga and could barely do the class.  Between being so big and a terrible night’s sleep, I couldn’t really flow and just did a lot of stretching.  But after yoga and a shower, I felt so much better!  Which is the whole point of going I guess. We worked through the to-do list (I think Matt is exhausted from my baby prep list, ha). Emerson and I set up the bassinet and then I boiled all the pump parts and bottles and washed the swaddles while Matt and Em weeded the bed out front. Matt also got down all the screens from the attic in preparation to have a window washer put them on all the second floor windows next week. I love my house, but between the spiders and the work it takes to be a home-owner, I was missing the high rise life this week:) The grass is always greener, right? We also got the car cleaned, got down the infant car seat from the attic, and moved Emerson’s seat to the passenger side (she’s not too happy about it). I’m getting so excited!!!!!

After Emerson’s nap, we went out for dinner at Haberdish, which is quickly becoming a Charlotte favorite! For a southern restaurant, they have a lot of gluten free options and the food isn’t crazy heavy.

We had the pecan-encrusted pimento cheese ball (served with green apple slices), the peanut butter, jelly, & bacon plate, daily pickles, tater tots, carrot ribbons, and smoked chicken plate.   I think we over-ordered and I just can’t fit much these days; but, it was actually so nice to bring some leftovers home for Sunday lunch.  Although Emerson rarely eats much when we go out, she’s at such a good age for restaurants because she just talks to us or brings toys.  Although getting her to stay seated now that she’s no longer in a high chair is usually a problem.

Sunday morning, it was Matt’s turn to do a fitness class, so Emerson and I took a short walk.  The Piggyback for our Uppababy Cruz arrived, so we put it on together and she tested it out. Who knows if it will last, but she LOVED it, and has been asking to ride the ‘scooter’ every day.  I imagine it will be hard to push once the baby is a decent weight, but it’s so nice to have this option, especially if we want to travel with this stroller.

Matt really wanted to go the Greek festival (apparently it’s a huge one), so I agreed despite the 90+ degree heat.  We told Emerson that she could do two rides and we’d get a quick treat and then come straight home because I knew I wouldn’t last long in crowds + heat. I spent a good amount of time in the bathroom line, but I’m still glad we went. Emerson has only ever been on a carousel and was thrilled to go on ‘real’ rides.

She did one with Matt and then went on the train solo.

And then we got a soft serve ice cream sundae to share and watched a couple of the performances in the shade before making our way home.

We ended the weekend with ‘healthy’ nachos because I had a tub of cashew queso to use up. We topped some organic chia corn chips with black beans, roasted sweet potatoes, red peppers, and avocado along with the queso and called it dinner! Gosh it was good!

    I need you to elaborate on this pb, jelly and bacon dish. It sounds amazing!

      It was a layer of crunchy peanut butter, then some kind of slaw, a sweet red pepper jelly, and giant pieces of bacon on top!!! So good.

    I didn’t know what all the fuss was over those Baklava sundaes until I had one a few years ago. Now I get it every year – SO delicious!!
